Happy Summer! This week, Squirrel is going nuts over completed architectural drawings!!! This is a major step-forward for our expansion, so check out the “Expansion Update” section below for more information! Squirrel is also going nuts over dried Camanelle and Fusilli pasta from Forma Pasta and garlic scapes from Raintree Farm (L) orHighland Farm (R).
On Monday, June 17th, we officially put our renovation project at 211 Mill Street

Fresh Tomato and Cheesy Spinach Pasta
Want to keep the cooking to a minimum while still taking advantage of the beautiful early produce? We have just the recipe for you! This recipe uses fresh tomatoes, spinach, herbs, feta cheese and pasta for a refreshing and simple under-30 minute meal. Thank you to staff member Gloria for contributing this recipe!
Ingredients:
1 bag Spinach
2 large tomatoes
6 oz feta cheese
4(+) cloves garlic
4 tablespoons olive oil
a pinch of onion powder, salt and pepper
1 package of pasta

Directions:
Pre-heat oven to 350 F.
Wash all of your produce.
Lay spinach down in the pan, cut tomatoes in half and lay facedown, then poke the tomatoes with a fork.
Peel garlic cloves and place in pan.
Lay down feta cheese.
Drizzle with olive oil
Throw on your salt, pepper and onion powder to your liking.
Bake in oven for 20-30 minutes
Boil your pasta according to the directions on the package.
Take your sauce out of the oven. Use a fork to mash and mix ingredients.
Mix in pasta, top with fresh basil and enjoy!
