Recipe Corner: stuffed on peppers!

This week, we have an assorted variety of colored bell peppers and sweet banana peppers thanks to Post Apples. They are all the perfect size to be stuffed with all sorts of veggie goodness. We’ve gathered a few recipes this week to beef (or tofu) up your stuffed pepper game.
Vegan? We found recipes using mushrooms (sub cremini mushrooms for Oyster or Lion’s Mane), and one using a tofu crumble.
For the meat lovers, we have “Gemista”-style Greek stuffed peppers (and tomatoes!), creamy chicken stuffed peppers, Southern-style bacon & corn stuffed peppers, and Italian sausage-stuffed banana peppers.
And of course, sit it and forget it in a slow-cooker! This is a great way to use up rice-based leftovers and have dinner waiting for you when you get home. For those who aren’t the biggest fan of eating peppers whole, you can always soup it up or use the insides to make a casserole for nights when you’ve maxed out your energy budget but still want a home-cooked meal.

Last Sunday, July 30th, we got a chance to chat with Beth Ivanic, owner of Lizziebeth’s sustainable home goods and baby gear. In July, we featured her as one of our Monthly Market Partners as she recently opened her children’s boutique “Hello Sunshine” in Meadville, PA. We love all of her cute, comfortable and reusable offerings for ages 0-6!

August is a time of harvesting & giving. Edinboro Market offers the community local foods that are good for your heart, your health, your bank account, your neighbor, the environment, and the local economy. The Market provides local farmers, food producers and artists a place to sell their products, try new things, and build community connections. If you are able, we would so appreciate a donation on our behalf to Erie Gives on Tuesday, August 8th.

This Sunday from 10 am to 3 pm (it’s finally here!) is our joint Open House in collaboration with the Meadville Market House, and Core Goods in Oil City.
Plan to join us for a family-friendly day of producer Meet & Greets, live music, local food samples, and more!

We have teamed up with another local shop, 814 Outdoor Sports in Edinboro, to bring you a raffle for an e-bike! Tickets are $15/ea, 3 for $40, or 8 for $100 and are on sale now until the Farm to Table Dinner when we’ll announce the winner.

The bike is a Himiway Cruiser Step Through E-Bike, valued at $1699 retail.
