What’s Fresh?
This week Squirrel is going nuts over soap from Copley’s, Al-By Farm, and Blackberry Meadows, and winter greens from Strawberry Lane Produce and No Dirt Farms. Squirrel also inspired Curtis at the Boro Sweet Spot to go on a cookie craze, so stop by for 8 different kinds of cookies, including gluten-free and vegan options.

Highland Farm Meet & Greet: Saturday, Dec. 3!
Highland Farm recently restocked their alpaca gear, just in time for the blustery December weather. Curious about how they raise their adorable alpacas and run their farm? Xinyang Sylves will be at Edinboro Market on Saturday, Dec. 3 from 12-2pm to answer questions about the farm and their alpaca products. Stop by and say hi and pick up a couple of holiday gifts that will keep loved ones cozy.

5 Year Anniversary
December 14th marks the 5-year anniversary of Edinboro Market’s opening. We started with 19 producers, and now have over 70. By the end of 2022, we will have sold $1 million in product for these hard working farmers, food makers, and artisans. Over $750,000 of that was paid out to our producers. Thank you for making both of these impressive statistics possible through your ongoing support!

Recipe Corner: Salads Gone Seasonal
Salad is not just a summer staple! We are fortunate enough to have growers who are able to supply fresh greens year-round thanks to hydroponics and high-tunnels. Instead of pairing greens with the classic tomato and cucumber, you can mix in other cold-weather staples such as radishes, squash, nuts, and dried/fresh seasonal fruit. This salad with roasted butternut squash, apples, and cheddar cheese sounds like the perfect appetizer for a winter soup and salad dinner. For a vegan option, try this kale, apple, and carrot salad with vegan feta cheese, or a beet, quinoa salad with 1-hour marinated radishes. Instead of the black radishes, you could pick up some Blauer radishes or salad turnips for a unique twist.
