Soup’s on! Another producer Meet & Greet and more announcements. 😉
This week Squirrel is going nuts over Fuji + Evercrisp apples from Orton’s, carrots from Wayward Seed, Medium and Original Harissa paste from Pur Spices, and restocked pork products such as pork chops, pork loin and ham slices from
Maple Leaf Farm.
Recipe Corner: Carrot, Apple & Harissa soup!
This week we are bringing you a sweet ‘n slightly spicy soup recipe from VEG-TABLE Recipes, Techniques, and Plant Science for Big-Flavored, Vegetable-Focused Meals by Nik Sharma. We have plenty of carrots and apples currently available, so it was exciting to find a recipe starring both of these ingredients. Feel free to adjust the recipe to fit your flavor preferences. This recipe makes 4-6 servings.
Ingredients:
1.5 lbs of carrots
1 large apple
1 tbsp extra-virgin olive oil
1/2 tsp salt
1/4 tsp baking soda
1/2-1 tsp harissa paste (If you like spice, go for the full tsp!)
3.5 c water, vegetable, or bone broth, (or apple cider!)
2 tbsp lemon juice
1 tbsp minced ginger
Directions:
Preheat your oven to 400 degrees F.
Peel and chop your carrots into 1/2 inch slices. Peel, core and chop your apple.
Combine in a bowl with olive oil, salt, and baking soda.
Spread on a baking sheet and roast for about 25 minutes, or until golden brown and tender.
Once the carrots and apples have cooled, transfer them to a blender or food processor and add the water/broth/cider, lemon juice, ginger, and harissa paste.
Blend. You can either blend until smooth, or pulse to your preferred consistency.
Rewarm the soup and garnish with herbs, more ginger, or sunflower seeds. This soup is also good cold.
