Happy Farm Microgreens, our newest microgreen producer, hails from just 10 minutes away in Cambridge Springs, PA. This family-owned farm specializes in sprouts and uses heirloom, non-GMO seeds without chemicals or fertilizers.
With 10 different varieties always growing, Jamie from Happy Farm Microgreens creates unique mixes and takes custom requests!

Thanks again to our reader, Lydia L. for sharing this week’s creation: sweet potato gnocchi with sautéed mushrooms in a simple butter sauce. The sweet potato gnocchi is just 3 guilt-free ingredients: flour, sweet potatoes, and salt!
Expand on Lydia’s recipe by adding veggies and herbs stir fried in butter or oil.
