A series of meetings, workshops, and events that are aimed at helping farmers and food businesses grow and flourish as integral members of the regional food economy. This work is aimed at bringing food businesses together to learn and grow. Grants Workshop | April 4, 2025 | 9 AM – 3 PM

This full-day workshop will give you a grounding in how to find, write, receive, and report on federal, state, local, and foundation grants. Learn from local grant recipients, workshop your own grant proposal, and prepare to apply for a grant opportunity for the Appalachia Regional Food Business Center.

Nicolette Spudic

Nicolette Spudic is a long time food industry professional with over 20 years experience in the food space. Her focus is on helping food businesses and non-profit organizations achieve their goals by providing business start up training, research, product and process development, and strategic consulting. She’s excited to provide entrepreneurs with the services that will help them compete better in the regional food economy. In addition to her position at CRAFT, Nicolette teaches within the Falk school of Sustainability at Chatham University and is a member of the Allegheny County Health Department’s Food Safety Advisory Committee.

Food Safety & Labeling Regulations | April 21, 2025 | 3 PM – 6 PM

with the Erie County Department of Health

Join Edinboro Market, the Erie County Department of Health, and the Center for Regional, Agriculture, Food, and Transformation (CRAFT) at Chatham University for a comprehensive Food Safety and Labeling Regulations presentation aimed at preparing food businesses to cook at commercial kitchens and ensure their food is labeled properly for sale. The presentations will cover commercial kitchen types, the application process, the information that needs to be on your food label, and more. While we suggest that you attend for both speakers, feel free to join us for all or part of this presentation based on your needs. Learn about Food Safety from 3:00 – 4:15 PM and Labeling Regulations from 4:30 – 6:00 PM.

Hosting Workshops & Events| May 19, 2025 | 3 PM – 6 PM

Are you a food or farm Business interested in diversifying your offerings through hosting workshops, but don’t have much experience? As consumers continue to look for creative and interactive events and ways to engage with the businesses in their communities, hosting workshops or other interactive events in your space is a great way to attract new customers and tap into a new revenue stream. Learn what goes into hosting a workshop, how to build a well-thought out curriculum, and how to organize your class for the best participant experience possible.

Grayson Skupin

Grayson Skupin is a Masters of Arts in Food Studies student at Chatham University. During their time at Chatham, they served as Kitchen Manager, Bread Oven Fire Master, and Community and Learning Project Coordinator, focusing on event planning, workshop curriculum development, on-farm value added production. From Houston, Texas, they graduated from the University of Louisiana at Lafayette with degrees in French and Francophone Studies, Organizational Communication, and History. A long-time hospitality industry veteran, they have experience across back of house roles, giving them insight into the organizational, logistical, and creative needs of modern food businesses. In their free time, they enjoy cooking, preserving the wild and agricultural bounty of Western Pennsylvania, reading, and fiber arts.

HACCP Plan Writing | June 9th, 2025 | 4 PM – 6PM

If you’re using a specialized manufacturing process to produce your food product, you may need to have a Hazard Analysis Critical Control Plan in place. Although the HACCP plan process may sound intimidating, it’s a business task that you’ll be able to complete yourself with a little training and support. Join us for a HACCP plan writing workshop that will review the writing process, steps to a successful plan, and personalized help to being writing a plan for your business.

Trevor Ring, Community Cultures

Trevor Ring is the founder Community Cultures. He has taught for a decade, worked for numerous agriculture, food and fermentation businesses, and produces fermented products in Pittsburgh, Pennsylvania.
